Thanksgiving weekend is always a busy time with family and friends.

For many families, it may include sitting down to a nice roast turkey supper.

Canada produces about 21.7 million turkeys or 183.3 million kilograms of eviscerated turkey.

Joni Rynsburger Rathwell is the general manager for Turkey Farmers of Saskatchewan and says about 32 million kilograms of eviscerated turkey is produced across the prairies.

"Alberta has about 1.9 million turkeys which are about 16.5 million kilograms of eviscerated, Saskatchewan we have about 800,000 which is about 5.6 million kilograms, and in Manitoba, they produce about 1.5 million turkeys or 10.3 million kilograms."

Turkey production and consumption has grown at the same rate as our population growth.

She notes turkey processing plants in the prairies are located in Saskatoon, Edmonton and Winnipeg.
